Pelosi emphasizes that a successful gathering doesn’t require elaborate decorations, dancing, or even strict timing—just good food and good company.

Make-Ahead Brunch Recipes for Stress-Free Hosting

Pelosi’s cookbook, Let’s Party: Recipes and Menus for Celebrating Every Day, offers themed menus, including “Breakfast for Dinner,” which inspired nostalgic, easy-to-prepare recipes. These dishes are designed for large groups, eliminating the need for short-order cooking.

Recipes such as Raisin Walnut French Toast, Scallion Cheddar Hash Brown Patties, and Diner Omelets for a Crowd can mostly be prepared the night before, giving hosts flexibility and more time to enjoy their guests.

Even first-time hosts can create memorable brunches with Pelosi’s advice. “Just do it! You do not have to be perfect,” he says. Delegating tasks, such as music or table setup, helps reduce stress and lets everyone contribute. Pelosi’s approach balances casual comfort with thoughtful planning, ensuring both hosts and guests enjoy the experience.

He emphasizes that mistakes in the kitchen do not ruin a gathering. “Just get people in the room! You can always order pizza if needed,” he added with a laugh.

Dan Pelosi’s Diner Omelets for a Crowd

Pelosi’s signature diner-style omelets are designed to serve six in about 30 minutes. The method keeps the eggs fluffy, the cheese melty, and vegetables crisp, while allowing hosts to prepare multiple omelets without standing over a skillet.

Ingredients

  • 1 pound sweet or spicy Italian sausage, casings removed

  • 1 medium head broccoli, cut into small florets

  • Kosher salt and freshly ground black pepper

  • 3 tablespoons unsalted butter

  • 18 large eggs

  • 4 cups shredded cheddar cheese

Instructions

  1. Preheat oven to 400°F.

  2. In a 10-inch nonstick skillet, crumble and cook the sausage over medium heat for about 6 minutes. Add broccoli, season with salt and pepper, and cook until crisp-tender, about 4 minutes. Transfer mixture to a large bowl and wipe the skillet clean.

  3. Melt 1 tablespoon butter in the skillet over medium heat. Whisk 3 eggs with salt and pepper, pour into the skillet, and top with ⅓ cup cheese. Cover and cook 2–3 minutes until set. Slide onto a cutting board and let cool. Repeat with remaining eggs and cheese.

  4. Top omelets with ⅔ cup of the sausage-broccoli mixture, roll tightly, and place seam-side down in a 9×13-inch baking dish. Repeat to assemble all six omelets. Cover with remaining cheese.

  5. Bake for 8 minutes until cheese melts and omelets are warmed through. Serve immediately.

For make-ahead convenience, assemble omelets the night before, refrigerate, then bring to room temperature before baking.
